A Fusion of Tastes
In the Caribbean, food is a fusion of flavors from around the globe. Because of its central location during the spice trade, the Caribbean islands were frequent stopping-places for the British, French, Spanish, African, Dutch, Indian, and Chinese. Quite a few of these people stayed, and many more brought with them their favorite foods and flavorings. Because of this diverse history, spices of the Caribbean are bold and flavorful, hot and spicy, and truly reflect a melting pot of cuisine.
The Caribbean islands were the birthplace of modern barbecue techniques. European colonists introduced oranges, limes, coconut, chick-peas, mangoes, cilantro, okra, rice, plantains, and breadfruit (and many other items) to the region. Other travelers introduced potatoes, passion fruit, papaya, avocado, and cocoa.
With all these global influences it is easy to see why Caribbean spices are so diverse. Throughout the years most spices from the east, and most fruits and chili peppers made their way through the Caribbean and were adopted into their cuisine.
